Baked zucchini fries with pesto yogurt dip

Ingredients
1 medium zucchini
2/3 all-purpose flower or whole wheat pastry flower
1 large egg
3/4 cup whole weat panko bread crumbs
3/4 table spoon paprika
1/2 table spoon salt
1/2 tsp ground pepper
olive oil cooking spray
The sauce:
1/2 cup nonfat plain Greek yogurt
3 tsp basil pesto
1/8 tsp salt
Instructions
1. Preheat the oven to 425 degrees F. Line a large baking sheet with foil and set a cooling rack on top of the baking sheet. Coat the cooling rack with cooking spray.
2. Cut the zucchini into 3-inch long and ¼-inch thick pieces.
Spoon the flour into a medium bowl. Whisk the egg in a separate bowl. In a third bowl, combine the breadcrumbs, paprika, salt and pepper.
3. Working with several zucchini pieces at a time, dredge the zucchini in the flour, shaking off the excess. Dip the zucchini in the egg, then place it in the bread crumb mixture, covering completely.
4. Transfer the coated zucchini pieces to the prepared rack, in a single layer. Repeat with remaining zucchini pieces.
5. Light coat the zucchini with the cooking spray.
6. Bake in the oven until the zucchini is tender and the breading is browned and crisp, about 15 minutes.
7. Serve immediately with the dipping sauce.

You’ll need:

Corn on the cob
Butter
Salt and pepper to taste

Step one: Soak the corn in a pot of cold water for 15 minutes

Step two: Preheat your grill on the medium setting.

Step three: Peel back corn husks, pull the silks off around the corn. Season the corn with butter, salt, and pepper, or your favorite seasonings.

Step four: Wrap corn rightly in tin foil to keep the steam in and speed up the cooking time.

Step five: Grill for 20 to 25 minutes or until tender, turning occasionally. Then, peel back the husks and remove the corn. Serve!

Snowflake oreo cookie

Yummy Christmas sweet

Ingredients

  • 36 OREO Cookies
  • 1 8-ounce brick cream cheese, softened
  • 16 ounces chocolate candy melts (we used Wilton brand), melted
  • Snowflake sprinkles (or other decoration of your choice)

Instructions

  1. Place OREO cookies in the bowl of a food processor and pulse until completely crumbled.
  2. Add cream cheese to bowl and pulse again until the cream cheese and cookie crumbs are completely blended together.
  3. Shape into 1-inch balls. Freeze for 10 minutes and if necessary reshape the balls into a round shape. Using a fork, dip balls in melted chocolate, and place in single layer in a shallow waxed or parchment paper-lined pan.
  4. Add sprinkles before the chocolate hardens, or allow the chocolate to set and then decorate as you wish.
  5. Refrigerator for 1 hour or until firm.

A delicious treat for the Fall

Caramel apples

Few desserts are more closely associated with fall than caramel apples.  Tart, crisp apples and sweet, chewy caramel make such a delicious pair!  These classic fall treats are quite easy to make, and yield impressive results.  Dress up your caramel apples with chocolate, nuts, or small candies to create an extra beautiful and decadent dessert.

How to make caramel apples 

You’ll need…

Apples (most commonly, Granny Smith)

Wooden apple sticks (available at the craft store or grocery store)

Caramel

Toppings such as chocolate (milk, dark or white), nuts, toffee bits, mini M&M;’s, or sprinkles.

Directions 

1. Wash and dry apples. If you can use organic apples that is best. Traditional (non-organic) apples are coated with wax, which can make it hard for the caramel to stick to the apple. If your apples are waxed, dip apples in very hot water for just a few seconds, then rub off the wax the best you can.

2. Melt caramel in the top of a double boiler or melt caramel in a large, microwave-safe bowl, in short intervals, stirring occasionally.

3. While the caramel is melting, push wooden apple sticks into the apples.

4. Holding the stick, dip apples (one at a time) into the melted caramel. Allow excess caramel to drip off.

5. Set freshly dipped apple on a parchment-lined (or Silpat lined) baking sheet. After you dip a few apples, put freshly dipped apples in the refrigerator to help the caramel cool quickly.

Options

If you’d like to dip your apple in nuts, mini chocolate chips, etc. do that before setting the apple onto the parchment.

Additionally, after the caramel apples have set up a bit, melt white, milk or dark chocolate and drizzle it on top of the apples. You may also top the chocolate with nuts or toffee bits or sprinkles.

Caramel apples are usually best the day they are made, but may be stored in the refrigerator up to two days.

Tip: It’s a nice idea for a gift to!

Spooky boo treat for the Halloween

Ingredients

1  box Betty Crocker™ Original Supreme Premium brownie mix
Water, vegetable oil and eggs called for on brownie mix box
1  1/4 cups Betty Crocker™ Rich & Creamy creamy white frosting (from 16-oz container)
16 large marshmallows
Betty Crocker™ black decorating gel (from 0.68-oz tube)

Directions
1. Heat oven to 350°F (325°F for dark or nonstick pan). Line 8- or 9-inch square pan with foil so foil extends about 2 inches over sides of pan. Spray foil with cooking spray. Make brownies as directed on box for 8- or 9-inch square pan. Cool completely, about 1 1/2 hours. Remove brownies from pan by lifting foil; remove foil. For 16 brownies, cut into 4 rows by 4 rows.
2. Heat frosting in microwavable bowl uncovered on High 30 seconds, stirring every 10 seconds, until frosting can be stirred smooth and fluid. If frosting becomes too firm while decorating, microwave 5 seconds; stir.
3. Top each brownie with 1 large marshmallow. Spoon 1 tablespoon frosting over each marshmallow to coat. Let stand until frosting is set, about 30 minutes. Use black gel to make eyes and mouths.

A yummy Halloween treat

It’s nice, easy and soooo tasty! You will need 1 hr and 30 min. What are you waiting for? Start now!

Ingredients:

15.5-oz. package Oreo cookies
8-oz. package cream cheese, softened
3/4 lb. vanilla-flavored almond bark, coarsely chopped
Sprinkles for decoration

Instructions:
Place Oreos in a food processor and pulse until finely chopped. Place chopped Oreos in a large bowl and add the cream cheese. Stir until well coated.
Roll mixture into 24 balls and place on a baking sheet covered with wax paper. Place baking sheet in refrigerator until firm, at least 30 minutes.
Place almond bark in a microwave-safe bowl. Heat in the microwave for 60 seconds and stir. Heat in 15-second increments until smooth. Stab the chilled Oreo balls with a skewer and dip into the melted almond bark until coated. Cover with sprinkles/edible decorations as desired. Carefully place balls back onto the wax paper and chill for another 30 minutes.

Chocolate Chip Cookies

Marvelously chewy, chocolate-rich cookie

INGREDIENTS
2 cups minus 2 tablespoons (8 1/2 ounces) cake flour
1 ⅔ cups (8 1/2 ounces) bread flour
1 ¼ teaspoons baking soda
1 ½ teaspoons baking powder
1 ½ teaspoons coarse salt
2 ½ sticks (1 1/4 cups) unsalted butter
1 ¼ cups (10 ounces) light brown sugar
1 cup plus 2 tablespoons (8 ounces) granulated sugar
2 large eggs
2 teaspoons natural vanilla extract
1 ¼ pounds bittersweet chocolate disks or fèves, at least 60 percent cacao content (see note)
Sea salt.
PREPARATION
Sift flours, baking soda, baking powder and salt into a bowl. Set aside.
Using a mixer fitted with paddle attachment, cream butter and sugars together until very light, about 5 minutes. Add eggs, one at a time, mixing well after each addition. Stir in the vanilla. Reduce speed to low, add dry ingredients and mix until just combined, 5 to 10 seconds. Drop chocolate pieces in and incorporate them without breaking them. Press plastic wrap against dough and refrigerate for 24 to 36 hours. Dough may be used in batches, and can be refrigerated for up to 72 hours.
When ready to bake, preheat oven to 350 degrees. Line a baking sheet with parchment paper or a nonstick baking mat. Set aside.
Scoop 6 3 1/2-ounce mounds of dough (the size of generous golf balls) onto baking sheet, making sure to turn horizontally any chocolate pieces that are poking up; it will make for a more attractive cookie. Sprinkle lightly with sea salt and bake until golden brown but still soft, 18 to 20 minutes. Transfer sheet to a wire rack for 10 minutes, then slip cookies onto another rack to cool a bit more. Repeat with remaining dough, or reserve dough, refrigerated, for baking remaining batches the next day. Eat warm, with a big napkin.

Ingredients
Pizza dough
2 tablespoons butter (1/4 stick), melted
1/4 cup chocolate-hazelnut spread (such as Nutella)
1/2 cup chopped bittersweet or semisweet chocolate
2 tablespoons chopped high-quality white chocolate (such as Lindt or Perugina)
2 tablespoons chopped toasted hazelnuts
Preparation

Preheat oven to 450°F. Line large baking sheet with parchment. Roll out dough on lightly floured surface to 11-inch round. Transfer dough to prepared sheet. Make indentations all over dough with fingertips. Brush melted butter over. Bake until pale golden, about 20 minutes.

Smooth chocolate-hazelnut spread over hot crust. Sprinkle chopped bittersweet chocolate and white chocolate over. Bake until chocolate begins to melt, about 2 minutes. Sprinkle chopped hazelnuts over, cut into wedges, and serve.
